This brine based ferments workshop will explore how to create seasonal ferments with unique combinations and teach you how to bring out the best flavour as well as the nutritional benefits of a whole range of fruit and vegetables. Jars of brine-based ferments are attractive to the eye AND mouth and look great on your kitchen counter, and as a gift for a loved one.

Slightly less technical than making sauerkraut, this method allows for even more room to play and experiment with vegetables. Following a demonstration, Elena will guide you through the techniques to achieve good fermentation results. Then, taking inspiration from tasters and samples of our current range, you will make your own jar of ferments from a wide range of fresh produce.

By the end of the workshop you will have a good understanding of how to make your own delicious ferments and the confidence to bring your own creativity to the process. You will take home London Fermentary recipes and a Kilner jar of the ferment you created in class to finish developing at home.

Come and start your journey to learn about and understand the importance of fermentation’s to your health and the benefits it can bring. This workshop is ideal if you are completely new to fermentation!


The workshop will cover:

• What is fermentation? Why do we ferment? What kind of fermentation used for vegetables?
• How to get inspired
• How to choose ingredients / what work well together
• The importance of salt and what salt to use in fermentation
• Time and temperature when it comes to fermentation
• Equipment and fermentation vessels
• How long to ferment for, why / what is the difference? (Particularly important when you heal your gut)
• Refrigeration
• Safety aspects of fermentation e.g. the difference between mould and yeast
• Common mistakes
• Q&A
