An intensive course, this full day is designed to cover all aspects of lacto-fermentation. It is practical, highly interactive and a collaborative experience that will allow for an in-depth and comprehensive understanding making a range of ferments.

Join us for an inspirational and exciting course at London Fermentary run by Head Fermenter Elena, our nutritionist and naturopath in-training Olga, and chef Hanne Cole (co creator of Butch Salads and Louie Louie).

An intensive course, this full day is designed to cover all aspects of lacto-fermentation. It is practical, highly interactive and a collaborative experience that will allow for an in-depth and comprehensive understanding making a range of ferments.
You will be given the support to be able to achieve good fermentation results using seasonal ingredients in the class and help instil the confidence to create your own fermented products at home. Making sauerkraut, for instance, might sound easy – combining just cabbage and salt – but understanding how to properly prepare, nurture and develop your ferment is the key to success.
This course is perfect if you are a complete beginner and looking to introduce fermented food into your diet at home, as well as for those looking to further domestic preservation skills!
You will leave with a sound knowledge and practical experience of how to ferment. Along with ideas, enthusiasm and inspiration for creating your own Ferments, you will leave with a large kilner jar of each of your ferments to further develop at home as well as Water Kefir grains to make your own Water Kefir.


Our One day course covers:

  • Introduction

  • What is fermentation?

  • Why do we ferment?

  • The benefits of fermentation

  • Sauerkraut

    We will introduce you to a whole range of flavour combinations that work particularly well in krauts. Elena will guide you through the techniques of preparing sauerkraut, then using a a wide range of fruits, vegetables, herbs and spices, you will have the opportunity to get creative and make your own unique sauerkraut. Using krauts we have in development, you will also learn how to look after your krauts and how to overcome or avoid potential challenges.

  • Sauces & Condiments

    We will introduce you to fermented sauces and condiments. Fun to make, raw, live and packed with probiotics, we consider these to be the most exciting ferment! Using a wide-range of seasonal fruits/vegetables, and herbs/spices, the possibilities for creating these unique ferments are endless. With plenty of tips and techniques, we are sure this ferment will become a firm favourite. You will then get creative in making your own unique fermented sauce and condiment.

  • Brine based ferments

    Using a range of seasonal vegetables and herbs, you will make your own water based ferment. After mastering the skill, you will be able to create your own range of new ferments at home, taking inspiration from the seasons and the left-over produce in your the fridge. We will equip you with plenty of techniques as to how to develop your ferments well and overcome potential problems.

  • Water Kefir

    First, Elena will give a step by step demonstration of how we make Water Kefir. We will taste and discuss different stages of Water Kefir brewing to experience the development of the drink. As well as a tasting of Water Kefir as a mixer for non-alcoholic beverages and chilled soups we will also look to the future of this incredibly powerful ferment.

  • Q&A session to review what you have learned


What should you bring?

Nothing!

We will provide everything you need. We will be using high quality produce from our fruit and vegetable business, Puntarelle & Co, and everything fermented from London Fermentary. With your own work area, you will have all the necessary equipment, including knives and aprons.

Our friend and very talented chef Hanne Cole will be providing lunch and afternoon tea at the course. To show you how easy and delicious it is can be to integrate fermented food into your diet, Hanne will be using our range of ferments in the food. There will also be non-alcoholic cocktails using our seasonal water kefir. Expect nothing short of a banquet!
